Simple yet delicious. These Japanese chilled wheat noodle dish is rich in fiber and makes a light but filling summer lunch. The recipe takes only five minutes to prepare and is full of flavorful delicious ingredients, such as ginger, lemon, green onions, seaweed, and sesame oil. Serve with sriracha sauce and soy sauce and accompany with a refreshing iced green tea!
- Organic soba Japanese wheat noodles
- Freshly grated ginger
- Freshly grated lemon zest (having a whole lemon in the freezer is an easy way to add freshly grated lemon to smoothies, salads and baked goods)
- Cut nori dried seaweed (use scissors)
- Thinly sliced green onion
- Sesame oil
- Sesame seed
- Soy sauce
In a medium pot on high heat, bring water to a boil. Cook organic wheat noodles as instructed on the package. Drain noodles and rinse well with cold water.
Serve Japanese noodles in a bowl and dress with a squirt of sesame oil. Garnish with ginger, lemon, nori, green onion, sesame seed, and sriracha. Don’t forget the soy sauce and the chopsticks!
