These flax seed thumbprint cookies are delicious, tender, and easy to prepare. Vegan natural butter is used instead of regular butter. The Earth Balance baking sticks–0% trans fat, non-GMO, preservatives, gluten and lactose free–are made with expeller-pressed vegetable oils, contain no hydrogenated oil, and are a good source of Omega-3 fatty acids and make these thumbprint cookies a much healthier snack than the classic buttery ones.

Vegan Thumbprint CookiesGet adventurous and use different toppings, such as marmalade, jam, or jelly, peanut butter, Nutiva hazelnut spread, dark chocolate, apple, dried fruits, or nuts.

Ingredients:

  • 2 cups of flour
  • 2 tablespoons of flax seed
  • 1/2 tablespoon of baking powder
  • A pinch of salt
  • 1/2 cup of brown sugar
  • 1/4 cup of almond milk
  • 1 teaspoon of vanilla extract
  • 1 stick of soften vegan butter (Hearth Balance, Smart Balance, or other vegan butter: 100 gr)
  • Jelly, peanut butter, Nutiva hazelnut spread, apple, dried fruit, dark chocolate and/or nuts.

Step 1: In a medium bowl, add the flour, baking powder and flax seed and mix well. In the center, add the almond milk, brown sugar, vanilla extract, and soften butter. With a fork start mixing the butter with the rest of the ingredients, then use your hands to mix everything together until you get a solid, uniform and moist dough. Cover the dough and let it rest in the fridge for 30 minutes.

Step 2: Preheat the oven to 400 degrees Fahrenheit. Uncover the dough and start making little dough balls, the size of a truffle. Place the dough balls on a cookie sheet and with your thumb, flatten each ball leaving a thumbprint in the middle, as shown in the pictures.

Step 3: Fill each thumbprint with your favorite jelly or spread and bake for 10 minutes, or until the cookies’ bottoms are golden brown and no longer stick to the cookie sheet.
